Silverstrike Cabernet Sauvignon, A William Knuttel Selection, Parlier, CA, 2012
The Laithwaites wine club delivers wonderful treasures in our quarterly cases, and this is one of those amazing treasures. I wanted to cook organic steaks for dinner and as I was considering our wine cabinet for pairings, I recalled the recent delivery and the California Cab bottles. I opened one of these, poured a small glass for marinating and cooking, and a full glass for myself. All I can say is Wow! What a beautiful, balanced and delicious Cab. There’s something to be said for cooking with and drinking the same wine. If you can find this one, marinate a hearty organic steak and saute some mushrooms and onions with it. Out of this world!
